One of the my almost daily struggles is getting out of bed in time to eat a nutritious breakfast. So instead of grabbing a coffee and a muffin in a disposable bag and cup on my way to work, I’ve started prepping this easy zero waste breakfast I can throw in my bag and heat up when I get to the office the night before. Yes, I know I should probably work on developing some kind of beautifully peaceful Hygge morning routine, but one thing at a time, pals!
I put half a cup of quick oats, two tablespoons of chia seeds, one tablespoon of ground flaxseeds and a tablespoon of oatmeal in a jar, top it off with sliced apple, half a teaspoon of coconut oil for some healthy fat, and voila! All I have to do is add water and pop it in the microwave when I get to work. It’s packed with fibre and protein to help keep my blood sugar in check and smells like apple pie (sorry office-mates)!
If you don’t have access to a microwave at work, add your favourite milk or yogurt the night before and make this an overnight oats recipe instead.
That’s it! A simple, healthy, zero waste breakfast and no furiously growling stomach on busy mornings at work!
